Upgraded Salted Vanilla Caramels

Ingredients:

2 cups dry roasted, salted cashews

3 cups pitted medjool dates, chopped

1 tablespoon vanilla extract

Flaky Sea Salt for topping

  1. Place cashews into food processor and grind until they become a powder.

  2. Slowly add chopped dates to food processor while it’s running.

  3. Allow process or run for about 5 minutes until add dates and vanilla are added and the mixture become a large clump of “caramel”.

  4. Place caramel into a small glass dish and press down into pan to form an even layer.

  5. Sprinkle generously with flaky sea salt.

  6. Put in fridge to solidify for at least 20 minutes.

  7. Slice into squares and enjoy!
